what are all the strange symbols used in creating your own key signature, how do you play them, what do they mean, and how do you play the chords for them??????

I assume that you are asking about the symbols shown in https://handbook.musescore.org/notation/pitch/key-signatures#creating-a…? If so, then they are, left-to-right, top-to-bottom:

flat
natural
sharp
double sharp
double flat
triple sharp
triple flat

I assume these two are for changing from a previous key signature with the other symbol on a given note.

natural flat
natural sharp

I assume this is an alternate way to indicate double sharp?

double sharp

I don't know what the last ones--with the arrows--mean either. At a guess, they might mean that you would play this note bent up or down from the flatted or sharped note.

However, if you don't know what those symbols mean, then you probably don't need to use them.
