How to add variable periodic size?

You mean a mixed meter, alternating time signature?
You can setup up such a time signature, but would need to manually change the duration or every 2nd measure
I would set the time signature to 11/8 then change it's text appearance to 65/88. Add extra barlines where required to get the 6 + 5 periodic.
